Roasted Balsamic Brussels Sprouts

Looking to mix up your veggie game? These tiny little bundles of joy can carry so many great flavors and are taken to a whole new level when roasted. This recipe makes a great, easy side dish–try serving it with chicken, or add bacon and make it meal!

 Roasted Balsamic Brussels Sprouts with Feta

Serves 4
1.5 lbs fresh brussels sprouts
2-3 tablespoons of olive oil {or olive oil spray!}
balsamic reduction
salt & pepper
4 oz crumbled feta

1. Preheat oven to 400ºF
2. Wash and trim your brussels sprouts, then cut them in half.
3. Arrange sprouts flat side down on a baking sheet and drizzle or spray with olive oil to coat, then sprinkle with salt and pepper to your taste.
4. Bake the sprouts for about 30 minutes–the baking time will vary depending on the size of your sprouts and your oven’s temp. Halfway through the baking time, take the sheet out of the oven, flip the sprouts over (flat side up), and drizzle them with the balsamic reduction***
5. Once they start to caramelize and brown a little, remove them from the oven. If you like them a little crunchier, feel free to let ’em cook a bit longer!
6. Top with feta and enjoy!
***You can buy a decent balsamic reduction/glaze at the grocery store for $8 or so,
