Monday Motivation: The Ultimate Turkey Burger

I am so thankful for my sister. One of many reasons: She has THE BEST recipes that she passes along! They are always simple to make {thank goodness!} but you feel like one amazing chef when you’re finished. Here is her guest post about the ULTIMATE Black Bean Turkey Burger. Does anyone else love to put together “clean out the fridge” recipes? Kind of like hosting your own version of the show Chopped at home? I really dislike letting food go to waste {R.I.P. spinach} and often find myself needing to come up with creative uses for whatever is on hand. Sure, lots of things can be frozen before they go bad, but eventually you have to use what’s in the freezer, too! With the expiration clock ticking away on a pound of ground turkey in the fridge, I scanned Pinterest for some inspiration. Sometimes, I’ll type in random ingredients that I have on hand just to see what shows up. Fortunately, a search for “ground turkey and black beans” lead me to discover THIS beautifully simple recipe from Slim Sanity. I used it as the basis for my own version of Black Bean Turkey Burgers, which turned out DELICIOUS.

Ingredients {serves 6}

½ medium onion, diced

2 cloves of garlic, minced

1 lb ground turkey

1, 14 oz. can of black beans (rinsed and drained)

2 oz. green chiles (half of 1 small can)

¾ cup panko crumbs

1 egg

1 tsp ground cumin

1/8 tsp cayenne pepper

½ tsp chili powder

1 tsp oregano

Salt & Pepper to taste

1. Sauté the onion and garlic over medium heat with a teaspoon of oil until translucent, about 5 minutes. You can skip this step if you like your onions a little crunchier.

2. Combine the onions and garlic with all other ingredients in a large bowl and mix well. {Feel free to modify the spices to your taste–the amounts listed here will give your burgers some flavor without overpowering. For more kick, get wild and double the spices!}

3. Form the mixture into 6 large patties and add them to a skillet with a little olive oil over medium heat. Depending on the size of your pan, you might only be able to cook a few at a time.

4. The burgers will need to cook for about 6 minutes or so on each side. Let them sizzle until they are cooked through and no longer pink. These can get a little crumbly, so be careful when flipping!
