Simple & Healthy Dinner with Edamame Pasta

Another Sunday thinking “What do I make for dinner this week?”

You’ve come to the right place! Edamame pasta is a new favorite in our household. {Yes, even our 11-month old LOVES it!} That feeling of driving home after a long day at work knowing I can eat a big bowl of pasta that is full of protein and less than 500 calories makes for one happy evening. {And one happy Momma!} We buy ours at Costco but you can also click HERE to get it straight from Explore Asian’s website.

Ingredients (for 2 servings):

Organic Edamame Spaghetti (by Explore Asian) – 4 oz

Spinach – 2 cups

Mushrooms – 1 cup

Chicken – 8 oz

*Extra virgin olive oil, garlic powder, Italian seasonings, salt & pepper to taste

Five Steps to One Healthy Meal:

STEP ONE || CHICKEN: Preheat oven to 350ºF and cook chicken for 25 minutes

Note – You can also grill or pan-cook chicken. Whatever is easiest for you! We usually cook enough chicken to have this dish for 2-3 nights worth of dinners at one time. (Make it extra easy for the week!)

STEP TWO || PASTA:  Boil 7-8 cups of water then add pasta. {Pasta cooks in 4-5 minutes – much faster than the regular stuff!}

Note – Don’t question how much pasta to cook and use a food scale to measure your pasta {and chicken!} Here is the one we bought (under $15!) and love: ETEKCITY DIGITAL KITCHEN FOOD SCALE

STEP THREE || SPINACH & MUSHROOMS: While pasta is cooking, sauté spinach and mushrooms in a LARGE pan using a little bit of olive oil and a sprinkle of garlic powder & Italian seasoning blend. {Personal preference on how much. We usually use a good amount of the Italian seasonings and just a sprinkle of the garlic.}

Note – Use a large pan so that you can add pasta and chicken later!

STEP FOUR || PASTA: Once pasta is cooked through, strain and add to spinach/mushroom pan. Set your heat to LOW and stir.

STEP FIVE || ADD CHICKEN: Once chicken is done, cut into small bite-size pieces and add to pasta/veggie mixture. Stir and add salt/pepper to taste.

DONE and DONE. Now Enjoy!

We haven’t ventured very far outside of this recipe with the edamame spaghetti besides using a smaller portion as a side with other meals.
